Eggless Pumpkin Pie


Thanksgiving is fast approaching, and lets face it,its pumpkin time. The fact is we all need a little sweet after dinner,even those that do not eat eggs,so here goes.

Makes 2 pies

2 ready -made graham cracker crust

4-5 ginger snap cookies

1 can pumpkin pie filling

1 box vanilla instant pudding

1 container of cool whip

1/2 teaspoon pumpkin spice mix

1 teaspoon vanilla extract

Make pudding according to directions on the box

Crush ginger snaps. Mix the pudding ,pie filling, cool whip,pumpkin pie spice,and crushed cookies  together in a large bowl.

Spoon mixture into the pie crust, cover with plastic wrap and freeze overnight.

Serve
