This amazing chicken is bursting with flavor.It is sweet from the honey,tangy from the citrus and spicy from the jalapeno and black pepper,WOW.A frosty beer and simple salad or pasta are all you need to round this off.

1 medium pineapple ,peeled,cored ,coarsely chopped
1 medium jalapeno chili,seeded,finely chopped
4 large cloves garlic,crushed
1 inch piece fresh ginger root,grated
1 cup orange juice
1/2 cup freshly squeezed lime juice
3 tablespoons soy sauce
2 tablespoons each frsh basil,parsley and cilantro
1 tablespoons freshly ground black pepper
1 teaspoon grated orange peel( zest prior to juicing)
1 teaspoon grated lime peel (zest prior to juicing)
8 large skinless boneless chicken breast halves
2 tablespoons honey
3 tablespoons butter or olive oil
Puree pineapple ,jalapeno and garlic in blender until almost smooth. Place in a zip lock bag and add everything but the butter and honey. Zip the bag and massage the coat the chicken well. Place in the refridgerator for at least 4 hours or up to 1 day,turning often.
Remove chicken from marinade.Using rubber spatula,lightly scrape excess marinade from chicken. Strain marinade into heavy medium saucepan. Transfer 1/3 cup marinade to small bowl. Whisk in honey. Boil remaining marinade until reduced by 11/2 cups sauce,about 15 minutes. Whisk in butter. season sauce to taste with salt and freshly ground pepper.
Prepare barbecue or broiler to medium high. Grill or broil chicken till cooked through,basting often with the reserved honey marinade.
Transfer chicken to platter. Garnish with fresh herbs and serve sauce seperately.
